Taco Salad Recipe
If you're wondering what taco salad is, it is basically a Mexican dish which is made up of fried flour tortilla shell stuffed with shredded iceberg lettuce and topped with shredded Cheddar cheese, diced tomato, guacamole, sour cream and salsa.
Taco salad is often topped with ground beef though chicken meat can be used too. Before the lettuce is added, refried beans are often added on the shell.
Making taco salad is really simple and fun. If you're tired of eating outside or you simply want to save some money, you can make your own salad and place it in a lunch box which you can bring to your workplace or school.
Just make sure that you that you cook the ground beef properly. If you're using a skillet over medium heat, browning the ground beef should take no more than 10 minutes. You can also deep fry the tortilla shells if you want to but it is healthier to spray a little olive oil and bake them instead.
Ingredients:
- 1 lb lean ground beef
- 2 bags (14.5 oz) corn tortilla chips, crushed
- 3 tomatoes, diced
- 1 bunch green onions, chopped
- 1 can (15 oz) red kidney beans, drained
- 1 can (15 oz) garbanzo beans, drained
- 1 bunch romaine lettuce, chopped
- 1 head iceberg lettuce, chopped or shredded
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 4 fresh jalapeno peppers, finely chopped
- 1 bag (12 oz) shredded cheddar cheese, divided
- 1 package taco seasoning mix
- 1 tablespoon chili powder
- 2 cups miracle whip
- 1 cup ketchup
- some vegetable oil
Instructions:
1. Preheat the skillet and add in the vegetable oil. Switch to medium heat and brown the ground beef on both sides and drain off the fat. Season the beef with chili powder place them on plate.
2. For the dressing part, in a bowl, add in the miracle whip, ketchup and taco seasoning mix. Combine and whisk everything well.
3. In a large bowl, add in the tomatoes, green onions, green pepper, red pepper, jalapeno peppers, romaine lettuce, iceberg lettuce, kidney beans, garbanzo beans, half bag of shredded cheddar cheese, 1 bag of crushed tortilla chips, the dressing made earlier as well as the browned and seasoned ground beef. Combine and mix everything well then cover the bowl and refrigerate.
4. Before serving, top the salad with the remaining shredded cheddar cheese and crushed tortilla chips. Enjoy!
